Soft and delicious

This recipe has gotten so many rave reviews on the WC lately that I decided that I must try it. And our little Memorial Day party was the perfect opportunity. I decided to make a double batch because I did not know how many cookies a single batch would make.

For the first batch I used a white chocolate pudding mix and for the second I used a chocolate fudge pudding mix. They both turned out awesome and my hubby loves them.
And for the record, using my medium sized Pampered Chef scoop (2 tbls of batter) I got about 37 cookies per batch.


Soft Chocolate Chip Cookies

Ingredients
2 1/4 cups all-purpose flour
1 teaspoons baking soda
1 cup butter, softened
3/4 cups packed brown sugar
1/4 cup white sugar
1 (3.4 ounce) packages instant vanilla pudding mix (any kind of instant pudding could be used)
2 eggs
1 teaspoon vanilla extract
2 cups semisweet chocolate chips

Directions
Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips.Drop cookies by rounded spoonfuls onto ungreased cookie sheets.Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

Love your blog Amber! I'll have to try those soft chocolate chip cookies sometime. I've got some boxes of pudding laying around that I need to use up. Why I never just make pudding I don't know!

sorry my whole ratio comments are so lame, i just think about these things. LOL. This recipe is a 1:1 ratio when it comes to butter vs sugar. Like I said typically its a 2:1 or 4:3 for (2sugar:1butter or 4sugar:3butter.) the reason this one is low in sugar, is because the jello makes up for it. Theres a lot of sugar in those jello pudding packets. if any of you havent tried this recipe, you are missing out!!!! This recipe is so dang good. the pudding does something amazing to the texture and flavor of these cookies. I like to experiment w/ different chocolate chip cookie recipes but my fam always has me go back to this one. I try differnt pudding flavour/ chocolate chip combos w/ this recipe. My favorite is the white chocolate pudding w/ white chips or m&ms. I also love just using the regular vanilla pudding w/ m&ms or chocolate chips. And I also like using chocolate pudding w/ peanut butter chips.
