Snack time

These are my late night / mid day snack quite often. They take such little time to make and have a great crunch to them.

The recipe for the creole seasoning listed below is very versatile. Besides these baked tortilla chips I use it on popcorn, mix it in with breadcrumbs and Parmesan cheese and use that to make a crispy crust for mac and cheese, mix it in with some butter, garlic, Parmesan cheese and use it on top of garlic bread, and I also used it for my Cajun Chicken Strips from the other night.


Baked Tortilla Chips

Ingredients:
Flour tortillas (any size)
Olive oil for brushing
Seasoning (I use the creole seasoning below but you can use anything you want)

Directions:
- Preheat oven to 350 degrees.
- Take a tortilla and brush it lightly with olive oil. Sprinkle on seasoning of your choice.
- With a pizza cutter, cut the tortilla in half. Fold the two halves together and cut stacked pieces in half. Then cut each half in half. You should end up with 8 pieces per tortilla.
- Arrange pieces onto baking sheet in single layer.
- Cook for 5-8 minutes (depending on the thickness of your tortillas) or until tortillas are crisp.

Emeril's Creole Seasoning

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly and store in an airtight jar or container.
Yield: about 2/3 cup

those look so yummy! i have always wanted to make those. are they as easy as they look?
