Cannoli dip

This was the other dessert dish that I prepared for the Pampered Chef show that I hosted this afternoon. Everyone enjoyed it, even those who do not like ricotta. It was very simple and took about 5 minutes to throw together. The only modification that I made was substituting mini morsels for the full size ones. If you are not a fan of whipped topping you probably would not like this dip because that is the most prominent flavor.


Chocolate Chip Cannoli Dip
(Adapted from: Pampered Chef Season's Best Spring/Summer 03)

Ingredients:
1/4 cup plus 1 tbls semi-sweet chocolate morsels, divided
1 container (15 oz) ricotta cheese
1/4 cup powdered sugar
1/4 tsp vanilla extract
1 container (8oz) frozen whipped topping, divided

Possible Dippers
- Strawberries
- Graham cracker sticks
- Sweet tortilla chips

Directions:
1) Reserve 1 tablespoon of the chocolate morsels for garnish. Chop remaining chocolate morsels using a food chopper or knife. Place in large bowl. Add ricotta cheese, powdered sugar and vanilla and mix well. Set 1/2 cup of whipped topping aside for garnish. Gently fold remaining whipped topping into ricotta mixture.
2) Spoon dip into medium serving bowl. Sprinkle remaining chocolate morsels over dip and pipe rosettes around edge of dip. Serve with your choice of dippers.

I have had something very similar to this, but with cream cheese instead of ricotta. Sounds delicious!

i'm sorry, i couldn't resist the cheesy comment. but this really does look sooooo good. and much easier than making traditional cannoli.

yum!!! i love cannoli and agree that the mini morsels are better in cannoli than the regular sized ones :)
