Chinese please

I came across this recipe a few months ago but kept pushing it out of the menu because I did not have any apple juice. I finally made it a point to buy some just for this recipe and I am glad that I did. Now what am I going to do with the rest of the huge bottle of apple juice? Drink it, no thanks! :) Please feel free to point me in the direction of some recipes using apple juice.

I have never had bourbon chicken at a restaurant so I can not compare this to the real thing. But this was a very simple dish to make and my husband and I really enjoyed it. I will be making it again. If you are not into spicy things I would suggest reducing the amount of red pepper flakes to 1/4 or 1/8 tsp. I served this with rice that I cooked in roasted garlic chicken broth and broccoli.


Bourbon Chicken

Ingredients:
2 lbs boneless chicken breasts, cut into bite size pieces
1-2 tablespoon olive oil

1 garlic clove
, crushed
1/4 teaspoon
ginger
3/4 teaspoon
crushed red pepper flakes
1/4 cup apple juice
1/3 cup
light brown sugar
2 tablespoons
ketchup
1 tablespoon
cider vinegar
1/2 cup
water
1/3 cup
soy sauce

Directions:
Heat oil in a large skillet.
Add chicken pieces and cook until lightly browned.
Remove Chicken.
Add remaining ingredients, heating over medium heat until well mixed and dissolved.
Add chicken and bring to a hard boil.
Reduce heat and simmer for 20 minutes.
Serve over hot rice and ENJOY.

My modifications:
-I only used 2 chicken breasts because that is all I had thawed. But I kept all the sauce ingredients the same as the original recipe so I would have plenty of sauce for my rice.
- I ended up using a slurry (cornstarch and water) to help thicken the sauce because I preferred it to be a thicker consistency.

I am not a fruit juice drinker, either, so most of the time when a recipe calls for juice, I just buy a single serving bottle (usually with the cold drinks in the supermarket, or even buy it from a convenience store!) That way, I don't have as much wasted juice.

This chicken looks so good!

I am becoming a regular reader, and I like your recipes! As for the apple juice, you could use it as follows:

Saute one sliced apple in a skillet with apple butter, cinnamon and apple juice. Serve atop vanilla ice cream and top with pecans!

I'm new to "What's Cooking?"--We just got married on June 21, and before that, it was like I barely ever had time to cook (damn wedding planning!).

So now that life is back to "normal," I've been searching for new recipes. We tried the garlicky limey chicken pasta, which we loved.

Then we tried this bourbon chicken. Delicious! We loved how it was so spicy (we like heat!), yet sweet at the same time. We didn't have any veggies on hand, so we just had the chicken and rice--next time, I'd definitely want to make it with broccoli like you suggested. Anyway, thanks for the delicious recipes!
