It's a wrap, on breakfast.

I bought some bacon at the store yesterday while I was out getting the oats for the No Bake Cookies. I knew that today I would wake up and make some breakfast burritos. I was so excited because I have never made these before.

I am sure my husband smelled the bacon and wondered why I was making bacon at 11:30. But I didn't care. I was having breakfast for lunch! Once he tasted the burritos he did not care that he was having breakfast for lunch either. He finished his up while I still had half of mine to go. I told him there was more eggs and bacon and he looked at me and grinned. That's how I know he wanted more. He and I both really enjoyed them.



One Pan Breakfast Burritos

What you need:

4 flour tortillas
10 strips bacon
4-6 eggs
2 Tbls milk
Salt and Pepper to taste
4 Tbls shredded cheese

What you'll do:

1) In large skillet, cook bacon until desired crispness (place on paper towel to catch excess fat) and set aside. Drain fat into heat resistant container and wipe out pan with paper towel.

2) Crack desired amount of eggs into bowl. Add milk, salt and pepper and whisk until well scrambled. Spay pan with non-stick spray and cook eggs over medium heat until done and set aside.

3) Turn burner up to medium high. Lightly butter one side of tortilla and place in pan. Leave in there for 30 seconds to 1 minute. Remove when tortilla is slightly browned.

4) To assemble: Lay tortilla (browned side up) on plate. Place desired amount of eggs in a strip in center of the tortilla. Top with 1 tbls cheese, then 2 1/2 slices of bacon. Fold up like a burrito and eat.
