Quick and easy kind of night

I had a test I needed to study for plus I had a busy evening of picking up our taxes, heading to the gym and the grocery store, making dinner and studying for the test. I decided to go the easy route tonight.

The chicken was good as always. I really like the McCormick Marinade packets.
The macaroni and cheese was decent (hubby had 3 servings!). It had the right creamy texture that I was looking for, but it had American cheese in it and I am not a huge fan of American cheese. So if you really like the flavor of those American cheese slices I am sure you would love this.



For the chicken I marinated it in McCormick's Mesquite marinade and baked it in the oven.
350 for 20-25 minutes. (the orangish liquid by the chicken is excess marinade I spooned onto my chicken. I am a dipper so I had to have extra something to dip my chicken into.)


Macaroni and Cheese

2 cups elbow macaroni, uncooked
1 pkg (8oz) Kraft Classic Melts cheese blend (I used the "four cheese" blend)
3/4 cup milk
salt and pepper to taste (optional)

* Cook macaroni per package directions; drain. Set aside.
* Add cheese and milk to saucepan. Cook on low heat about 5 minutes or until cheese is melted, stirring frequently. Add macaroni to saucepan and stir until well coated. Let stand 5 minutes for sauce to thicken.

Mmmmm mac n' cheese! I have never used marinade packets - I will have to check those out!
