Spicy little strips

I came across this recipe a few months back on the WC and I finally got around to trying it. My husband and I really enjoyed them. I did substitute panko (Japanese breadcrumbs) for the Italian seasoned breadcrumbs and it made the chicken strips very crispy. Just the way I like them. I also added some lots of garlic powder, onion powder, chili powder, and a touch of salt and pepper to the breadcrumbs.

I did make some modifications to make this healthier.
*Used whole wheat panko instead of regular bread crumbs
*Used whole wheat flour instead of regular
*Used 1 whole egg and 1 egg white



Spicy Crispy Chicken Strips

Ingredients
- 1 lb thin sliced chicken breasts, trimmed and cut into long 1-inch wide strips
- 1 cup Italian bread crumbs
- Spices (about 1-2 tbs each): garlic powder, cayenne pepper, red pepper flakes
- Dried parsley
- Option: ¼ c finely shredded Parmesan cheese
- 2 eggs, beaten
- 1 cup flour
- Cooking spray


Directions
- Preheat oven to 400 degrees
- Spray a cookie sheet with cooking spray
- Mix bread crumbs with spices; add in cheese if you are using it and mix
- Dip chicken strips in flour, then egg, then bread crumb mixture; put the strips on the cookie sheet
- Bake for 7 min, flip the strips and bake for 7 more minutes; then turn the broiler on for 1-2 min

I made these a while back and thought they were pretty tasty. I like your modifications. Yours look better than mine did!

Looks awesome! I still haven't cooked with panko yet. DH loves his chicken strips super crispy so panko sounds like the best way to go!
