In the baking mood

I had the urge to bake tonight but had no clue what to make. I spent all day thinking about it but ended up leaving work with no ideas. When got home I remembered that I had a bag of M&M's in the freezer. So I started searching for recipes using them and this is what I came up with.

I had to have another talk with my husband tonight. I once again told him that when he described my food he needed to say something other than "this is *beep* good". So he changed his response to say that these cookies are "a little bit of heaven" HAHA. I personally thought that they had a funny taste but I am 99% sure that is it because I used a different brand of butter than I usually do and I do not care for that particular brand but had to use it up.



Red's Ultimate M&M's Brand Cookies

Ingredients:
1 cup (2 sticks or 240mL) butter or margarine softened
1/2 cup (120mL) granulated sugar
1/2 cup (120mL) firmly packed light brown sugar
1 large egg
1 teaspoon vanilla extract
2 cups (480mL) all-purpose flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1 12-ounce package (340g) M&M'S® Chocolate Mini Baking Bits
3/4 cup (180mL) chopped nuts (optional)

Directions:
Preheat oven to 350°F (180°C). In large bowl cream butter and sugars until light and fluffy; beat in egg and vanilla. In medium bowl combine flour, baking soda and salt; blend into creamed mixture. Stir in M&M'S® & Chocolate Mini Baking Bits and nuts. Drop by heaping tablespoonfuls about 2 inches (50mm) apart onto ungreased cookie sheets. Bake 10 to 13 minutes or until edges are lightly browned and centers are still soft. Do not overbake. Cool 1 minute on cookie sheets; cool completely on wire racks. Store in tightly covered container.

Aw, M&M cookies always make me feel like a kid again. That's so funny about your hubby.. for the longest time mine would say "It's not bad" about EVERYTHING I made. Finally I said to him that I don't consider "not bad" a compliment and he needs to work on that a LOT more.. he's finally getting better. :)~

Ive made these before & i remember thinking they werent quite as sweet as your traditional chocolate chip cookie. A lot of times, w/ a chocolate chip cookie recipe, its a 2:1 sugar to butter ratio. (For example, if theres 1 cup butter, the recipe will then call for 2 cups sugar.) with this recipe, its 1 cup butter and 1 cup sugar (when you combine the brown and the white sugar) so its a 1:1 ratio making it more of a shortbreadish type cookie. and i think thats because these cookies call for m&ms which are sweeter than typical chocolate chips. its a really good buttery cookie. M&M corp. new exactly what they were doing when they came up w/ this recipe. I love this recipe im definitly gonna make it again. Im much more of a butter fan than i am a sugar fan(:
