Pumpkin please

Another amazingly good recipe from Delish! I have had the urge to bake something with pumpkin for a while now but was never able to crawl out from behind the schoolbooks to do so. This weekend I decided that I was going to take time for myself and not even think about or do anything related to school. Wow, what a nice feeling that is. I can't wait until I can make that feeling permanent. Anyway, I saw Ash make this recipe a few weeks ago and decided that I wanted to try it. It is just like a pumpkin roll without the fuss and extra [wait]time of rolling it up. Wow, this is excellent! My husband and I loved it.


Pumpkin Sheet Cake with Cream Cheese Frosting

Cake:
4 eggs
1 1/2 cups granulated sugar
1/4 cup vegetable oil
1/2 cup applesauce
2 cups pumpkin
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda

Icing:
8-ounce package cream cheese, softened
1 cup sifted confectioners’ sugar
1 tsp vanilla extract

Preheat the oven to 350 degrees.Using an electric mixer at medium speed, combine the eggs, sugar, oil, apple sauce and pumpkin until light and fluffy. Stir together the flour, baking powder, cinnamon, salt and baking soda. Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth. Spread the batter into a greased 13×10″ baking pan. Bake for 30 minutes. Let cool completely before frosting.

To make the icing: Using an electric mixer in a medium bowl, beat cream cheese until smooth. Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again. Spread on cooled cake.

And for all you Pampered Chef lovers out there, this cake fit perfectly in my large bar pan! That stone was one heck of a good investment!!
