I seemed to have an excess of potatoes sitting around my house and was trying to think of something new to make as a side. This was the first thing that came to mind. These are such a simple and yummy appetizer, or side dish if you prefer.
Many people make these by slicing a potato in half and scooping out some of the insides but I prefer just slicing the potato into slabs. It helps cook the potato evenly and doesn't waste any of the insides. These would be a perfect snack for the upcoming superbowl parties.
Potato Slabs

Ingredients
2 russet potatoes
Salt, to taste
Black pepper, to taste
Paprika, to taste
1/3 cup colby-jack cheese
5 slices of bacon, cooked and diced
Green onions for garnish, if desired
Sour cream, if desired
Directions
1. Preheat oven to 375. Clean and scrub potatoes well. Slice the potatoes into 1/4" thick slices. Place potatoes on lightly buttered baking sheet and season each side with salt, black pepper, and paprika. Cook for 30 minutes. Flip potatoes over and cook for an additional 15 minutes.
2. Remove pan from oven and place a pinch of cheese and bacon on top of each potato slab. Return the pan to the oven and cook until cheese is melted and bubbly, about 10 minutes. Serve with green onions and sour cream, if desired.

Yum! These look a lot easier to eat than potato skins that use half of a potato.

Mmmm, yummy! I have a similar recipe- the only difference is that I brush my potatoes with BBQ sauce, then top with cheese and bacon. You should try it! These look pretty darn perfect, though....

Thank you for posting this. It is such a great idea. I love potato skins, but the whole process of baking potatoes, then scraping out the insides just seems so wasteful to me. This is so much better!
These are sooooo delicioso~! The only thing I did different, is I cut up my bacon before I fried it. I usually use my kitchen shears. Much much easier to fry that way (it's how I do it for my 7-layer salad). Thank you for the wonderful recipe~!

I keep meaning to tell you that I tried these out on superbowl sunday and they were fabulous! So much easier that potato skins and like you said, less waste! Good one!
I have seen stuffed potatoes but this idea is so much fun, they'd make great appetizers :).

These are so much better than potato skins. You can make 6 or more per potato rather than just 2, and they are a huge hit!
